What are some good mods that add more to the game? I've having a lot of fun with FTL, mostly playing on Normal but I've been itching to play a mod that adds more content to the game without making is much harder.

Unfortunately most of the well known overhaul mods with the "most content" (CE, ARS+, Inssurection) completely break balance. I wouldn't even necessarily say they make it harder, just completely unfair.

If you're looking for new content that won't really tamper with the game's balance too much, there's a lot of smaller mods that you can mix and match like weapon and ship packs, or novel ones like Vicious Vessels which adds new enemies to encounter.
