Was using the kestrel. This is what I had by the last sector.

1x hull ripper drone mk 1.

1x kestrel artemis

2x artillery laser mk 1( total of 8 damage)

1x burst laser mk 2

Nearly maxed out engines.

Max Shields.

Oxygen, doors, medbay, piloting maxed out.

drone control lvl 4.

1 zoltan with max engine skill

2 mantis

4 humans; 1 maxed on weapons, one on shields and one on piloting

1 engi.

Cant remember exactly, but I once got 4x mark 2 burst lasers.

Did this once on a legitimate playthrough, and narrowly won, as the rest of my ship was knackered.

Once did the same with the fleet turned off, and owned everything, with two boosters and pre ignition thingy. I don't think there is a better choice, as that is 12 shots every seven seconds or so with a fully outfitted ship.
